Directions


  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.

    In a bowl, whisk together flour, baking powder, baking soda, salt, and black pepper.

    In another bowl, beat eggs, then mix in milk and olive oil.

    Combine the wet and dry ingredients, then fold in chopped spinach, feta, and green onions.

    Divide the batter evenly among the muffin cups.

    Bake for 20-22 minutes or until the muffins are golden and a toothpick comes out clean.

    Allow muffins to cool in the pan for a few minutes before transferring to a wire rack.
