Directions
In a non-stick skillet over medium heat, cook the bacon until crispy. Remove it from the skillet, let it cool, and crumble it.
In the same skillet, add a touch of cooking spray or oil. Sauté the diced red and green bell peppers until they are tender and slightly caramelized. Remove them from the skillet and set them aside.
In a bowl, whisk the eggs until well beaten. Season with salt and pepper to taste.
In the same skillet, add a little more cooking spray or oil if needed. Pour the beaten eggs into the skillet and cook over medium-low heat, stirring gently, until they are softly scrambled and just set.
Assemble the tacos: Place two tortillas on each plate. Divide the scrambled eggs, sautéed peppers, crumbled bacon, and shredded cheddar cheese evenly among the tortillas.
Garnish with fresh cilantro, if desired.
