Directions


  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a mixing bowl, combine the rolled oats, peanut butter, honey (or maple syrup), protein powder, vanilla extract, and salt.

  3. Fold in the dark chocolate chips if using.

  4. Use a spoon or cookie scoop to drop rounded tablespoons of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.

  5. Gently flatten each cookie slightly with the back of the spoon.

  6. Bake for 10-12 minutes, or until the cookies are set and the edges are golden.

  7. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
