Directions

For the Lamb Kebabs:

  1. In a mixing bowl, combine ground lamb, finely chopped red onion, minced garlic, ground cumin, ground coriander, dried oregano, smoked paprika, salt, and pepper.

  2. Mix the ingredients thoroughly and then divide the mixture into 4 equal portions.

  3. Take each portion and shape it around a wooden skewer, forming a kebab shape. Repeat for the remaining portions.

  4. Place the lamb kebabs on a plate, cover with plastic wrap, and let them chill in the refrigerator for about 15-30 minutes.

For the Greek Salad:

  1. In a large bowl, combine diced cucumbers, diced tomatoes, diced red onion, halved Kalamata olives, and crumbled feta cheese.

  2. In a small bowl, whisk together extra-virgin olive oil, red wine vinegar, dried oregano, salt, and pepper.

  3. Drizzle the dressing over the salad and gently toss to combine. Adjust seasoning as needed.

For Grilling:

  1. Preheat the grill to medium-high heat.

  2. Lightly oil the grill grates to prevent sticking.

  3. Place the chilled lamb kebabs on the grill and cook for about 6-8 minutes per side, or until they are cooked through and have a nice char on the outside.

  4. Remove the kebabs from the grill and let them rest for a few minutes.

To Serve:

  1. Arrange the lamb kebabs on a serving platter.

  2. Serve the kebabs with a generous side of the Greek salad.

  3. You can also serve the dish with warm pita bread or rice, if desired.
