Directions
Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
In a mixing bowl, combine the grated zucchini, unsweetened applesauce, honey (or maple syrup), eggs, vanilla extract, and Greek yogurt.
In another bowl, whisk together the whole wheat flour, cocoa powder, baking powder, baking soda, and salt.
Gradually add the dry mixture to the wet mixture, stirring until just combined.
If desired, fold in dark chocolate chips.
Pour the batter into the prepared cake pan and spread it evenly.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
