Warm up with a comforting bowl of Hearty Chicken and Vegetable Soup!
Directions
In a large pot, heat olive oil over medium heat. Add chopped onion, garlic, carrots, and celery. Sauté until onions are translucent.
Add diced chicken breast and cook until no longer pink.
Pour in chicken broth and bring to a boil. Reduce heat to a simmer.
Add diced tomatoes, green beans, dried thyme, salt, and pepper. Simmer for about 15-20 minutes until vegetables are tender.
Taste and adjust seasoning if necessary.
Ladle the soup into bowls, garnish with fresh parsley, and serve.
