Enjoy the delightful flavors of our Healthy Pan-Fried Vegetable Medley!
Directions
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Add the mixed vegetables to the skillet and spread them out in an even layer.
Let the vegetables cook without stirring for about 2-3 minutes, allowing them to develop a slight char on the bottom.
Stir the vegetables and continue cooking for an additional 3-4 minutes, or until they are tender and have a nice sear.
Push the vegetables to the side of the skillet to create space.
Add the remaining tablespoon of olive oil to the empty space in the skillet and sprinkle the dried Italian herbs and garlic powder over the oil.
Let the herbs and garlic cook for about 30 seconds until fragrant.
Mix the herbs and garlic with the vegetables, making sure the vegetables are well coated.
Season with salt and pepper to taste.
Remove from heat and transfer the pan-fried vegetable medley to a serving dish.
