Directions
Start by preparing the marinade.
In a bowl, whisk together the olive oil, lemon zest, lemon juice, minced garlic, dried oregano, dried thyme, salt, and pepper.
Cut the chicken breasts into 1-inch cubes and place them in a resealable plastic bag or a bowl.
Pour the marinade over the chicken cubes, making sure they are well coated.
Seal the bag or cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
Preheat a grill or grill pan over medium-high heat.
Thread the marinated chicken cubes onto skewers if using wooden skewers (make sure to soak the skewers in water for about 30 minutes before grilling to prevent burning).
Grill the chicken cubes for about 4-5 minutes on each side, or until they are cooked through and have nice grill marks.
The internal temperature of the chicken should reach 165°F (75°C).
Once cooked, remove the chicken from the grill and let it rest for a few minutes before serving.
Garnish with fresh parsley if desired.
