Directions
Heat a non-stick skillet over medium heat and lightly grease it with cooking spray or oil.
Crack the egg into the skillet and cook it over easy, which means cooking it on one side until the white is set, but the yolk is still runny. Season with a pinch of salt and pepper to taste.
While the egg is cooking, warm the whole wheat tortilla in the microwave for about 10 seconds to make it pliable.
Place the tortilla on a clean surface and layer it with fresh spinach leaves.
Once the egg is cooked to your liking, carefully transfer it on top of the spinach.
Sprinkle the crumbled bacon over the egg.
Optionally, add salsa or hot sauce for extra flavor.
Fold in the sides of the tortilla, then roll it up from the bottom to create your breakfast burrito.
