Directions


For the Flank Steak:

  1. In a bowl, mix olive oil, minced garlic, cumin, paprika, salt, and pepper.

  2. Place the flank steak in a resealable plastic bag or shallow dish. Pour the marinade over the steak, ensuring it's well coated.

  3. Marinate for at least 1 hour (or up to 4 hours) in the refrigerator.

  4. Preheat the grill to high heat.

  5. Remove the flank steak from the marinade and let any excess drip off.

  6. Grill the flank steak for about 5-7 minutes per side for medium-rare, or adjust cooking time to your preferred level of doneness.

  7. Once cooked, remove the steak from the grill and let it rest for a few minutes before slicing.

  8. In a bowl, combine finely chopped parsley, cilantro, minced garlic, chopped shallot, red wine vinegar, red pepper flakes, salt, and pepper.

  9. Gradually whisk in the extra-virgin olive oil until the sauce is well blended. This is your chimichurri sauce.

  10. Slice the grilled flank steak against the grain into thin strips.

  11. Serve the sliced steak with a generous drizzle of the chimichurri sauce on top.

  12. You can also serve the steak with roasted or grilled vegetables and your favorite side dishes.
