Directions
In a large pot, melt butter over medium heat. Add chopped leek and sauté until softened.
Sprinkle flour over leeks and stir to create a roux. Cook for a minute, stirring constantly.
Gradually add vegetable broth, stirring to avoid lumps. Add diced potatoes, bay leaf, and dried thyme. Bring to a simmer and cook until potatoes are tender.
Add mixed seafood and corn kernels. Cook until seafood is cooked through.
Stir in milk and heavy cream. Simmer for an additional 5-7 minutes.
Season with salt and pepper to taste. Remove the bay leaf.
Serve hot, garnished with chopped fresh chives.

1 leek, cleaned and chopped

3 cups low-sodium vegetable broth
1 cup milk (2% or whole)
1/2 cup heavy cream
2 tablespoons all-purpose flour
1 bay leaf
1/2 teaspoon dried thyme
Salt and pepper to taste
