Directions


  1. In a large pot, melt butter over medium heat. Add chopped leek and sauté until softened.

  2. Sprinkle flour over leeks and stir to create a roux. Cook for a minute, stirring constantly.

  3. Gradually add vegetable broth, stirring to avoid lumps. Add diced potatoes, bay leaf, and dried thyme. Bring to a simmer and cook until potatoes are tender.

  4. Add mixed seafood and corn kernels. Cook until seafood is cooked through.

  5. Stir in milk and heavy cream. Simmer for an additional 5-7 minutes.

  6. Season with salt and pepper to taste. Remove the bay leaf.

  7. Serve hot, garnished with chopped fresh chives.

3 cups low-sodium vegetable broth

1 cup milk (2% or whole)

1/2 cup heavy cream

2 tablespoons all-purpose flour

1 bay leaf

1/2 teaspoon dried thyme

Salt and pepper to taste
