Directions
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, combine the oats, almond flour, shredded coconut, dried cranberries, and chopped nuts.
In a separate bowl, mix together the mashed banana, melted coconut oil, honey (or maple syrup), and vanilla extract.
Gradually add the wet mixture to the dry mixture, stirring until well combined.
Use a spoon or cookie scoop to drop rounded tablespoons of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
Gently flatten each cookie slightly with the back of the spoon.
Bake for 15-18 minutes, or until the cookies are golden around the edges.
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
