Directions
Rinse the brown rice thoroughly under cold water until the water runs clear. This helps remove excess starch and prevents the rice from becoming too sticky.
In a medium-sized saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Add the rinsed brown rice to the saucepan and sauté for another 2 minutes, stirring frequently, to lightly toast the rice.
Pour in the water or vegetable broth and add a pinch of salt. Bring the liquid to a boil.
Reduce the heat to low, cover the saucepan with a lid, and let the rice simmer for about 40-45 minutes, or until the rice is tender and the liquid is absorbed.
Once the rice is cooked, remove the saucepan from the heat and let it sit, covered, for about 5-10 minutes.
Fluff the rice with a fork. Add the lime zest, lime juice, and chopped cilantro to the rice.
Gently mix until the ingredients are well combined.
Taste and adjust the seasoning, adding more salt or lime juice if needed.
