Directions


  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.

    In a bowl, combine oats, flour, baking powder, and baking soda.

  2. In another bowl, whisk together honey/maple syrup, applesauce, milk, egg, and vanilla extract.

  3. Gradually mix the wet ingredients into the dry ingredients until just combined.

  4. Gently fold in the blueberries.

    Divide the batter evenly among the muffin cups.

  5. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

  6. Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
