Directions


For the Beef Kofta:

  1. In a bowl, combine the ground beef, chopped onion, minced garlic, chopped parsley, ground cumin, ground coriander, paprika, salt, and pepper. Mix well.

  2. Divide the mixture into 8 equal portions and shape each portion into an elongated sausage shape around a soaked wooden skewer.

  3. Preheat your grill to medium-high heat.

  4. Grill the beef kofta skewers for about 4-5 minutes per side, or until they are cooked through and have nice grill marks.

    For the Rice:

  5. While the kofta is grilling, rinse the rice under cold water until the water runs clear.

  6. In a saucepan, combine the rinsed rice, water, and a pinch of salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and the water is absorbed. Fluff with a fork.

    For the Greek Salad:

  7. In a large bowl, combine the cherry tomatoes, diced cucumber, thinly sliced red onion, diced green bell pepper, and crumbled feta cheese

  8. For the Yogurt Dipping Sauce:

  9. In a small bowl, combine Greek yogurt, fresh lemon juice, minced garlic, dried dill, salt, and pepper. Mix until well combined.


    To Serve:

  10. Warm the whole wheat pita bread rounds.

  11. Serve the beef kofta skewers alongside the cooked rice, pita bread, Greek salad, and yogurt dipping sauce.

1 pound lean ground beef

1/2 onion, finely chopped

2 cloves garlic, minced

2 tablespoons fresh parsley, chopped

Wooden skewers, soaked in water for 30 minutes

1 cup long-grain white rice

2 cups water

2 cups cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, thinly sliced

1/2 green bell pepper, diced

4 ounces feta cheese, crumbled


For the Yogurt Dipping Sauce:


1 cup Greek yogurt

1 tablespoon fresh lemon juice

1 clove garlic, minced

1 teaspoon dried dill (or fresh if available)

Salt and pepper to taste


For Serving:

4 whole wheat pita bread rounds
