Directions
For the Beef Kofta:
In a bowl, combine the ground beef, chopped onion, minced garlic, chopped parsley, ground cumin, ground coriander, paprika, salt, and pepper. Mix well.
Divide the mixture into 8 equal portions and shape each portion into an elongated sausage shape around a soaked wooden skewer.
Preheat your grill to medium-high heat.
Grill the beef kofta skewers for about 4-5 minutes per side, or until they are cooked through and have nice grill marks.
For the Rice:
While the kofta is grilling, rinse the rice under cold water until the water runs clear.
In a saucepan, combine the rinsed rice, water, and a pinch of salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and the water is absorbed. Fluff with a fork.
For the Greek Salad:
In a large bowl, combine the cherry tomatoes, diced cucumber, thinly sliced red onion, diced green bell pepper, and crumbled feta cheese

For the Yogurt Dipping Sauce:
In a small bowl, combine Greek yogurt, fresh lemon juice, minced garlic, dried dill, salt, and pepper. Mix until well combined.
To Serve:
Warm the whole wheat pita bread rounds.
Serve the beef kofta skewers alongside the cooked rice, pita bread, Greek salad, and yogurt dipping sauce.

1 teaspoon dried dill (or fresh if available)

For Serving:
4 whole wheat pita bread rounds
