Directions
In a large pot, heat olive oil over medium heat.
Add cubed beef and brown on all sides. Remove beef and set aside.
In the same pot, add chopped onion, garlic, carrots, and celery.
Sauté until onions are translucent.
Return the browned beef to the pot. Add dried thyme, salt, and pepper. Stir to combine.
Pour in beef broth and bring to a boil. Reduce heat to a simmer and cover. Cook for about 30 minutes.
Add pearl barley and continue simmering for another 30-40 minutes, until barley is tender.
Taste and adjust seasoning if needed.
Ladle the soup into bowls, garnish with fresh parsley, and serve.

1 cup pearl barley
8 cups low-sodium beef broth
